Hawkers are less specialized, they are moving out of the cities.
In each capital, there's a special merchant, to use your factions points (P then Advanced) to get a nice pike, cats, generic mats... The name change (Imperial, Federal, Dynastic...) regarding countries. To the User_Manual#Transporters (or NH, for New Horizons) and Occupations.
Stable boys sell Mektoubs and hay, they are in towns. More on User_Manual#Mektoubs and Mektoub FAQ.
